This one took some getting used to. The nose tickles with strawberry, orange rind, a touch of pineapple and crushed white stone. The palette is where things took a bit of time to open up. My first impression was “oh my god this is bone dry,” but that wasn’t quite right. It was just that all those fruit notes on the nose seemed to have disappeared. Left in their place was flittering bubbles wrapped in a mineral bath. However, with a little time to develop the fruit started to poke through, definitely on the tart side. Perhaps more elegant than a $7 bottle of cava has the right to be, I will revisit this one.

It’s a Brut alright. Drier than I personally like in a Rosé but it finishes with all the fruitiness you’d expect. In fact it finishes so well it makes up for all the initial harshness of the fizz.
