Great example of the new wave of terroir-driven, non-fortified wines coming from Jerez, aka Vinos de Pasto. This comes from different plots within Pago de Miraflores in Sanlúcar, from 80-90 years old vines rooted in different Albariza soils. Fermented and aged for 8 months in old sherry casks under flor. Pure, fresh, mineral, with notes of dried herbs, yellow apple and a tinge of sherry. Intense, salty, dry. Chalky texture. Very tasty, easy to drink

Jul 16th, 2021N: Seashore, Peaches, Pineapple, vanilla( slight) salt, apples and apricots.
P: Salt, really bright, fruit appears more on the finish, yellow fruits, not quite complex, but refreshing as all. Treads lightly on the palate but by no means thin.Very lemony on the finish.
