Billecart is fermented very slowly at very low temperatures, an innovation that was introduced by a German brewer who married into the family in the 1950's. The reserve is composed of approximately 40% Chardonnay, 40% Pinot Noir and 20% Meunier. I find it the most zesty and refreshing of all the grand marque styles, and always of very high quality.

It is Sunday night and we have received our daylight saving gift from the government that comes this time every year. So tonight I have opened the Billecart-Salmon Red Brut Reserve Champagne.

The nose has very nice fruit showing ripe strawberries, red raspberry, grapefruit, a nice mint, some vanilla, spice and minerality.

There are bright fruits on the palate, bright strawberry, cherry, citrus notes, lemon zest, a yeasty bread, and nice minerality.

This wine has high acidity that hits right a the front that moves right into a creamy mid palate and leads into a clean crisp finish.

An easy drinking champagne that is easily paired with spicy Asian food.
