La Chavaroche Côte-Rôtie Syrah

Opened and decanted about an hour before dinner. No formal notes. The 2007 B. Levet "La Chavaroche" is flat out beautiful right now. The aromatics are off the charts with gorgeous, ripe dark fruits, a bit of the animal, a veritable hillside of lavender, black olives, some deli case, black pepper, some leather and earth. The structure is still firm but everything is well integrated at this point; superbly balanced; great acid. The finish is long and has some ferrous minerals that I simply love. A sublime pairing with a Morgan Ranch Wagyu tenderloin served with corn purée, charred broccolini and juniper ash. The 2007's are absolutely ready to drink now with a short decant (mostly to remove any sediment) however, they will continue to drink well for another 10+ easy from good cellars.

Chavaroche. Solid.

A little bit of hump day extravagance.

Look who has crawled out from underneath that rock! Levet's 07 Chavaroche is stunning right now. Deep and complex notes of roasted chestnuts and milk chocolate with an exceptional elegance.

Meat, olives, bacon fat. The nose was a little muted, but overall a fantastic wine. Still good on day two.

Wild, briny, olive, cracked black pepper, raw meat. High acid, drying fine tannin. 😍😍😍

Rustic and complex. Iron, orange peel, black olives and berries, ending on a licorice note. Decanted for about an hour and drinking beautifully.

I have loved this in the past. Not today.

Massive tannins, acid, stewed tomato, green olive, fruit. Delicious, but can go a lot longer.

Would unquestionably be better in five years. But after five hours in a decanter? Notes of freshly opened plastic water wings and freshly killed game. #creepybutdelicious #littlekidnightmare
