Etna Bianca- contrada monte Serra 2023. 1st vintage. Never oak only stainless steel for all carricante. Pale oak. Lowest elevation. Near sea level Very ventilated. On the nose, herbaceous, salinity, almonds, and on the palate, sea salt, citrus, tropical fruit, minerality, richness and fullness and more tropical fruit, mango, papaya, florals in the finish. Paired with olive oil.
Fried octopus with tomato and wild fennel. Saltiness of octopus with saltiness and acidity of wine nice pairing.
