I have a major soft spot for Governo, a style of wine made of all Sangiovese but where about 20% of the grapes are passito (rasined grapes). Added at time of fermentation. This effect adds color, alcohol, body to Sangiovese. Making it so much more enjoyable while young.

Build on partially dried grapes, good wine but personally, a style that doesn’t work with Sangiovese according to me

Earthy, full bodied, and still light and drinkable like a Noir. But so much better. Always love a Sangiovese
