Lovely bio Fiano - big on ripe tree fruit with great acid and the slightest bit of funk. Easily drank two bottles with an amazing Neapolitan seafood spread. (Fresh salad with tuna, pasta with mussels and vongole, whole salt-crusted seabass, fritti misti).

Hereโ€™s a wine made from 100% Fiano grapes by San Salvatore. Itโ€™s called Pian di Stio; named after a plateau located on the grounds of this estate. It hails from Paestum IGP in the Campania region of Southern Italy. ๐Ÿ‡ฎ๐Ÿ‡น ๐Ÿ‡ฎ๐Ÿ‡น

I love imagining the herd of 450 water buffaloes roaming amidst the vines and olive groves on the San Salvatore estate, which is farmed organically. ๐Ÿฆฌ๐Ÿฆฌ These buffaloes (an image of which is featured on the label) are also responsible for the estateโ€™s buffalo mozzarella that would undoubtedly pair perfectly with this wine. ๐Ÿ‘๐Ÿ‘๐Ÿ‘

๐Ÿ‘ This wine is medium lemon and has elegant, youthful aromatics of melon, tart white peach, apple, pear, lemon pith, chamomile, also white pepper, fresh basil, and pine nuts. ๐Ÿ‘ƒ On the palate it is dry, has medium(+) acidity, a medium body, medium alcohol, and medium intensity of flavors consistent with the nose. It is crisp and balanced with a medium finish. ๐Ÿ‘„

Despite its crispness, it has a richness and texture that give it more body than one would expect. The alcohol is 13.5% ABV. The grapes used to produce this wine underwent six hours of cold maceration (cryomaceration) and were then fermented in stainless steel.
