Cuvée Perle d'Ayala Millésime Brut Champagne

2002 Vintage

Ayala Perle D'Ayala Brut Millèsime 2002 is an elegant blend of 80% Chardonnay and 20% Pinot Noir from the Grand Cru regions of Le Mesnil-Sur-Oger, Chouilly and Cramant. It's been aged on the lees for eight years, giving it nice balance and weight against a tensile acid spine. Golden delicious apple, lemon zest and shortbread form that wonderful trifecta of aromas that is not unlike a freshly-baked apple pie. I especially like that the finish is very long, and very persistent.

All Grand Cru, 80Ch/20PN, 6g/l dosage. Made by the old team before Bollinger purchased Ayala in 2005. Maturing, cream & porcini aromas, excellent texture & length.

Yummy bubbles

Amazing. Could make you weep. Just as good as any of the top cuvée lines from the other houses but for half the cost....I'd say at that price it tastes even better.

Excellent bubbles. Extremely fine bubbles. High acidity. Baked biscuits. So drinkable.

Bright and youthful with diamond knife-like acidity.

Text book bubbles . A restrained nose on opening but brioche and peaches after 30 minutes. Drank big but retained a level of elegance.
