Fascinating #willamettevalley white from #apollonivineyards. I had the distinct pleasure of being served this wine from the winemaker/owner Alfredo Apolloni, who made the trip for a tasting event at a local Houston wine bar. Alfredo was humble and engaging. He walked me through this wine, choosing to age 25% in acacia wood barrels so there’s a really compelling white citrus blossom aroma mingling with grippy tannins, hints of vanilla but no malolactic fermentation to preserve freshness and acidity. The acid bite is offset with forward fruit on this #pinotgris
