The nose is quiet, withdrawn. Shrimp shell and dried cherry and rosemary-- very 21st century Scandinavian.
Compact and dense in the mouth, with a bridge's substructure of elaborate acidity. More subtlety: yeast and tide pool, return of cherry. Sits and radiates.

Mar 15th, 2017Disgorged April 2015. Very nice Champagne. Judicious use of oak and oxidation. Floral and tart, with crisp Chardonnay came through at first, followed by ripe red fruit once the bottle warmed up a bit. Dosage noticeable, but not muddling the focus.
