A night cap after the Scarlett Reserve. Tasted many times with consistent notes. This is a stunning SB. Exotic, tropical bouquet. Loads of citrus fruits on the palate. Deftly balanced. Best domestic SB we’ve tasted.
In the background, our new cellar. Glass frame will be inserted in a week or so.

Thanks to @David L , I’m a believer. Loads of ripe melon, lemon zest, white grapefruit, lemongrass, and tropical fruits of all kinds; green guava, pineapple, kiwi. This is better with lots of air and closer to room temp. Jesse Katz is doing some really fun wines right now, and this stands out. I think this will age really nicely. Extremely interested to learn more about the oak treatment. When I heard Haut Brion Blanc barrels, my ears perked up. Check out @Greg Ballington ‘s post.

Freezing cold here, but never too cold to bust out a benchmark SB. Sip, close your eyes, and I swear I was transported to the Caribbean!

16’ Aesthete Dry Stacks White Wine. Pour a glass & let it open up for about 20 minutes.

Nice acidity throughout the wine!(lengthy) Stony melon, grapefruit, passionfruit, lemon zest.

Better then Bevan’s Dry Stack Vineyard... you would’ve never guessed they came from the same Vineyard. This is a much better made wine! Edit- Taste better as it warms up. Better with food! Drinking window 6/8 years.

Inaugural vintage of a brand new winery with Jesse Katz as their winemaker.
Medium pale yellow with a touch of green. Layered nose with white blossoms, creme brulee, honeyed melon and stone fruits. Medium plus acidity (6.5/10) and medium plus bodied. Lovely complexity on the palate with notes of stone and tropical fruits, a touch creamy, and light baking spices. Long and lingering finish.

Aesthete Wines is a new winery with wines made by Jesse Katz of Aperture Cellars and Devil Proof. This is the maiden vintage of their Proprietary White which comes from the Dry Stack Vineyard in Bennett Valley. This vineyard was accquired by one of the owners, Jeff Jones during the begining of his unplanned journey with his brother Peter Jones. Both are owners of Aesthete Wines. This bottling is made up of 100% Sauvignon Blanc and aged in an interesting oaking program. Which is as follows: "These French Oak barrels (Haut Brion Blanc barrels) that have acacia barrel heads with a very particular toast represent 10% of the oak in this wine with another 40% being new Francois Freres medium and light toast as well as 50% once used French oak." Only 200 cases produced. Excellent Sauvignon Blanc.

$$ - Sample provided by winery. Release price is $55.00.

Rich and tropical, awesome sauv blanc. I would put this above Realm and La Pelle but a step below Melka. Still want to do a side by side tasting with some sea food to get a more accurate comparison. Thanks @Shay A for putting me on to this!

Edit: bumping up my rating after this had more time to open up

Well dang. I got this on recommendation of @David L , @Carl Fischer , @Mike R , @Ron R and a few others. I am SO glad I did, especially after hearing that my favorite SB, Arkenstone, is moving to $95/bottle! To me, this tastes like Arkenstone on day 2. It is chock full of pineapple juice, cantaloupe, kiwi and stone fruits. Reminds me of the ice cream bar Creamsicle in how creamy it is. There is a tartness with the fruit but also balanced acidity. It is powerful and bold. Truly fantastic for those who enjoy bigger style SB. As you can see in the background, @Mark Flesher enjoyed it!

Yeah, I sound like the old record that I am. Loving this stuff. It’s on another level, but it’s not cheap.

Without doubt, the sauv blanc find of the year for us. Beguiling nose and palate. A true party in your mouth. So exotic and layered. Beautiful acidity meets peaches, guava and citrus notes. The minerality adds another layer of complexity. This winery only produces SB, and it shows. Get some!
Happy new year to one and all 🎈
