Nestarec is up there with the most cultish of natural wine and tiniest of allocation. Last year, I tried his white Forks & Knives. I really didn’t like it. It seemed dead and mid- ferment. But the red here (all Pinot), is so incredibly alive. It’s spiritual. The aromas jump at you - bright red fruits and a heavy dose of rocky minerals. And cooked, smoked, agave. And iodine - the smell of your hands after cracking open red lobster. And raging acid. Ok, Nestarec, ok.
