Chenin Blanc in this style is always so pleasurable because of combining freshness from the vibrant acidity and mineralogy with the depth of its richness. After an hour, the intense goat cheese funk (rind) blew off and I was left with caramelized apples, honey-dipped almonds, fresh thyme, and a bit of salinity.

Big bold chenin. Melon, some honey, decent acidity. Not a bad wine by the classic with some classic bistro food.
