Highly versatile. Paired beautifully with fried catfish, trout, tuna, foie gras and beef cheek. That’s fucking impressive. Opened up when came to room temp - had a soft round mouthfeel but enough structure to hold up to every dish. Just enough acidity to satisfy my palate without overwhelming the dishes.

A bit reductive upon opening but it blew off quickly. Lemon rind and Granny Smith apple with a mouth-coating texture. Saline, acid, and minerality to round it out. I love every wine I’ve ever had from Envinate and this is no exception.

One of my favorite producers has hit this out of the park again! Taganan is the site located on the Northern side of Tenerife- Canary Islands. This native varietal wine shows notes of darker bruised red apples, somewhat mealy texture complimented with toasted sesame notes and smoky finish. Good to pair with stewed, Smokey meats and potatoes.
