Dark tawny brown in colour. Strong molasses/cane earthy smoky aromas. A brilliant palate of Caramel, molasses - a fluid mellifluous palate, so smooth it doesn’t show its 47.5% ABV. Aged in Double charred Oak Barrels. A marvellous Rum from Guatemala - love the raffia basket weave around the base of the bottle - great presentation. — 5 years ago
Sistema Vinari Fato. Dinner w Jauma and Yida at Almarge in Baladona. Beautiful blood orange nose. Quite light bodied but bold at the same time.

Aromas of pineapple and other fruits. Tea, chocolate, coffee, mint, oak, ripe peach running through the caramel. Super smooth. This might be the new favorite. — 4 years ago
Una maravilla. Vino PX de DO Montilla Moriles con muchísimos premios. Hecho de uvas pasificadas; y sistema tradicional de Criaderas y Solera, como mínimo 20 años de crianza en las botas más antiguas de cuando se fundó la bodega. Color azabache; nariz muy intensa a pasas, higos, café y regaliz. Boca soberbia, aterciopelada, intensa, cremosa; sí, es dulce, pero equilibrado; largo y gran retrogusto a chocolate, dátiles y frutos secos. Probably my favourite rum - it’s from Guatemala. They use virgin sugar cane honey - the first pressing of the sugar cane, unlike most rums which use molasses. As I’ve mentioned in previous notes on Delectable, aromas of burnt caramel, tar and molasses. Aged in a Solera system at 2300 metres above sea level. Firstly in American Oak Barrels then in charred American Oak barrels, then in barrels that previously aged Sherry and finally in barrels that previously aged Pedro Ximinez.
