24 Hour Update:
Nose has yeasted dough, flat seltzer, limestone infused apple juice, hard crusted bread, oxidized red apple peel and bruised yellow apple.
Palate has tart yellow apple, saline puff pastry, faint lemon juice, limestone infused water, lemon zest with balanced acidity and a long, long finish. Outstanding.
The P-F wines always need a minimum of 24H open, 48H really if you have patience because then they open to just the most beautiful Champagne you've ever paid under $100 for, every time. No fear, the bubbles will wait over 48H so plan ahead for maximum enjoyment. — 4 years ago
Just concluded the annual Fall seclusion at our cabin in the Rangeley lakes region of Maine, mobile service up there is mostly non-existent, after several days I am posting again. Notes are somewhat brief, as my focus is relaxing and watching the Common Loons swimming and diving in the cove in front of our camp.
Nose has chilled hay, lemon zest, sweet pear, mountain stream and river rocks.
Palate has ripe pear, cold mango, under-ripe pineapple, mineral water and a medium finish. A slightly different bottle then prior experiences, mildly less expressive. — 4 years ago

Palate has tart green apple flesh, red apple peel, lime zest, lime juice, light limestone paste, lively with medium finish and fun acidity. — 4 years ago

Deep red brick color from long cellaring. Rich full bodied with viscous oily legs. Notes of wet clay, forest floor, mint and sage in the bouquet. Now ripened raspberries, now sweet tomato slow roasted under the oven light, now strawberry cream, now spiced baked cherries, with hints of cinnamon, flinty cave stone, and salt water in the palate. Soft but rich mouthfeel with balanced tannins that are nicely polished but keep a good grip. Green tea, hints of mild tomato, pie spices (cloves, nutmeg, cinnamon) lingering on the finish. Notes of smoked bacon fat, fried egg, herbs, and spices keep lingering for many minutes. Please do not pair with anything ;) — 4 years ago

Made from the Rkatsiteli grape variety grown in the Kakheti region of the Country of Georgia. This wine was fermented on the skins in Qvevri, large clay jars buried under the ground, following the 8000 year old Georgian traditional method. The wine’s amber color is a result of its extended contact with the skins. Nose and palate of dried peaches, apricots, nuts, baking spices, herbs, honey, sea water.
