Overview
A beautifully crafted Blanc de Blancs made in the traditional méthode champenoise, sourced from the organic Cox Vineyard in Mendocino County. Produced by Breathless Sparkling Wines, founded by the three sisters Sharon Cohn, Rebecca Faust, and Cynthia Faust, this cuvée reflects the winery’s philosophy of celebrating life’s “breathless moments.” Elegant, artisanal, and fruit-centered, it captures California brightness while honoring Old World technique.
Aromas & Flavors
Fresh brioche, lemon curd, white peach, and crisp green apple, lifted by subtle minerality. Gentle notes of pastry cream, toasted almond, and rising dough show the extended lees contact and classic champagne-inspired craftsmanship.
Mouthfeel
Bright, delicate, and creamy. The mousse is refined and persistent, offering a graceful texture that remains lively from start to finish. A very clean, uplifting acidity shapes a long, refreshing finish.
Food Pairings
Oysters, goat cheese tartlets, shrimp ceviche, sushi, fried tempura, creamy pastas, or delicate white-fish dishes. Also a beautiful aperitif on its own.

I like this better than the first bottle. Dark fruits with big acidity then game, trees, more purple fruits, white pepper, lingering finish of herbs almost oregano with wild berries. So good with food and on its own. Lovely. — 2 years ago
Blend of Golden Russet, Bramley's Seedling, Porter's Perfection and Cox Orange Pippin. Pale white in color, cloudy. Lightly carbonated with fine bubble size. McIntosh like aroma profile. Tangerine flavor with citrus tartness, mixed citric and malic finish. Should go great with food — 8 years ago

I echo all the comments made, this is simply cracking. Tasmanian Chardonnay at its best, perhaps Tolpuddle has a rival- so restrained like Winx at the 600m mark in a Cox Plate!! Buy it when you see it, it won't last long — 9 years ago
