Nose of ripe, preserved, wrinkled apples…complete, complex, hints of baking spices, lighter than anticipated, but packing that 80 proof wallop. This has well integrated components of the wood and is showing the deep harmonious notes of autumn; decaying leaf mould, slightly browning apple skin/pulp, clean hummus. It is all tertiary sweetness. — 2 years ago

Only about 2 years on wood. This has a bit of pear in it as well which shows in a delicate perfume of yellow skined fruits. This should be very interesting to riff with as a base for white spirit cocktails. — 2 years ago
