Randy Dunn does Washington. And he does it well. What I love about this is that it's the exact opposite of a Napa fruit bomb, it has aromas of Cedar, vanilla, chocolate covered strawberries, and some leather tones as it opens up in the glass. Palate is super smooth despite being young, with some herbs de Provence, leather, and sweet market cherries. Medium bodied and a perfect companion for a My Father Le Bijou 1922. — 10 years ago


Move over Cocchi and Lillet! This is perhaps the best quinquina vermouth I’ve had. It’s a good aperitif when served up or chilled, but the extra cardamom kick makes it a great cocktail ingredient. It makes a really good Vesper, but try it on a Bijou:
- 1.5oz navy strength gin (I used Krobar from Paso Robles, but Plymouth or Hayman’s should work great)
- 0.75 oz Green Chartreuse
- 0.75 oz ?! no. 73

2011 vintage. Deep opaque ruby color, silky mouthfeel, grippy tannins. Cherry, plum, cola, baking spice, hint of vanilla, cedar notes. Long finish, plenty of structure. Could age for a few more years. — 8 years ago
