Pale yellow with effusive minuscule bubbles. Highly expressive aromas right out of the gate with toast with a dab of honey and smoke. Apples abound initially upon opening. Very pretty, delicate citrus notes of lemon zest and apricots. White grapes and really inviting spice. Dried fruit comes back with a warm embrace.
I’ve talked glowingly about these Bouvet champagnes before and will continue to do so because he just does not miss. The last vintage he made with his grandfather and though it’s oh so young, it exceeds expectations. Tiny production because most of the grapes are sold to Bollinger. Zero dosage so the terroir speaks clearly and the zippy acidity is pure. Composed of Chardonnay and Pinot Noir from Avenay Val D’Or, Bisseuil, and Mareuil sur Ay and disgorged in early 2020.
Very inviting in the mouth. No dosage isn’t everyone’s cup of tea but this is so warm and generous. Vibrant and engaging with orange and apricot notes. Toasty bread and hazelnuts along with chalk and sea spray. Exquisite minerality. These are exciting grower champagnes that seemingly only get better. — 3 years ago

Medium straw with a light green tinge. Persistent effervescence of tiny bubbles with a fine and creamy mousse. The nose is rich and highly expressive. Chalkiness and smoke all over this, with beautiful tropical fruit also chiming in. Pears, apricots, and lemon peel. Hazelnuts and honey.
I love these low dosage champagnes. Not always for the faint of heart but they can be so dang splendid. 3 g/l dosage and disgorged in June 2019, this spent 2 years on lees. Half Chardonnay from Sezanne, 30% Pinot from Avenay Val D’or, and the rest Meunier from Cuis, this has a fine pedigree and pure fruit. Terrific minerality and tension here.
The palate starts with fresh tropical fruit upfront. A little pineapple gets the party with more lemon and pears. Chalk, dried herbs, and oranges. Roasted nuts and yeast with spice on the medium to long finish. — 4 years ago
Really enjoyed this. Big creamy clean finish. — 7 years ago
The NV Brut 7 Crus is an attractive, easygoing wine that will drink well upon release. A touch of Pinot softens the edges nicely, giving this Chardonnay-base Champagne tons of accessibility. Lemon confit, chamomile, mint and white pepper all open in the glass, but it is the wine's textural feel that makes the 7 Crus so rewarding to taste and drink today. This release is equal parts 2017 and 2016, from parcels in Avize, Oger, Oiry, Cramant, Avenay Val d’Or, Bergères les Vertus and Mardeuil. About 25% of the wine was done in neutral oak, the rest in cask. Dosage is 7 grams per liter. Disgorged: April, 2020. (Antonio Galloni, Vinous, November 2020) — 5 years ago
