10 years old…lighter in color, texture, tannin, the Tablas CdP influenced blend is in a very good point of it’s development. A touch of browning, the sweet viscus weight of this Paso blend has morphed into something thinner, more complex, more balanced., more nuanced, more interesting. Worked well with simple summer take-out pizza. I love Tablas… their entire program just keeps illustrating how to keep new world conditions and old world farming principles together. All the tannins had nicely smoothed out, but unfortunately so had most of the flavor and nose. My cork had dried out and the wine was a little over the hill. Oh well. Still a good wine but not extraordinary. — 15 hours ago

Optio Vineyards San Luis Obispo Grenache 2020, California

Deep purple in color with a short purple rim.

Strong nose of blueberries, dried figs, raisins, oak, licorice, cooked cherries, vanilla, spices, espresso, cola, light tobacco and black pepper.

Full bodied and smooth with medium acidity and long legs.

Dry and fruity on the palate with stewed blueberries, cherries, oak, licorice, spices, chocolates, tobacco, bitter herbs and peppercorn.

Nice length on the finish with round tannins.

This young Grenache is drinking very nicely already. Spicy and rich.

Nicely balanced with mild complexity. Showing a smooth mouthfeel.

Good right out of the bottle, and better with airtime. Will continue to age nicely in the next 5 to 7 years.

Easy drinking and good by itself. I paired it with a Charcuterie board of meats and cheeses.

Grapes were aged in oak barrels for 17 months. A tiny production of only 3 barrels.

14.5% alcohol by volume.

This is a fantastic Cabernet Sauvignon based blend from Paso Robles. Easy drinking and spicy at this point.

Medium plus in body with medium acidity.

Showing red and black fruits with vanilla, licorice, cedar, earth, peppercorn, leather, tobacco, chocolates and coffee.

Long finish with round tannins and tangy cherries.

Showing great complexity with a smooth mouthfeel. So pleasant and enjoyable by itself, and really gorgeous after 3 hours of airtime.

This 23 year old is not going to get any better with time, but it is delicious now. I just love these aged Bordeaux blends.

Interesting, elegant and rich. Fruit forward and extracted.

I've had a younger vintage of the Reserve a few years ago, and it is very consistent. Nice to see these quality wines out of Paso Robles.

Thought I posted this 6-7 months ago but evidently it didn’t go through.

While I’m still on the waitlist, I’m able to buy a few bottles a year from a friend. This is the first bottle I purchased back in 2017. I know it’s young, but I couldn’t resist any longer. I double decanted this for about an hour then consumed from bottle over the next three.

I’ve had most of the Saxum offerings, but I don’t think I’ve had Broken Stones before, yet it’s just absolutely killer like every other Saxum I’ve had. Deeply purple/black in the glass with aromatics of roasted blueberries and blackberries that are then dipped in dark chocolate, alongside smoked meat. I never know how else to describe it, but certain high quality Paso Rhône style blends have this airy/weightless-jammy flair to them, which I love…definitely present here. Coiled up at first but as the evening moved on, the layers kept unfolding with notes of charcoal, spiced dark fruits, cherry jerky. Perfect balance of acidity & tannin.

Best in 2-3yrs, but quite enjoyable with 3-4hrs of air now.

@Paul T- Huntington Beach @Eric S : I’ve been fortunate to have many aged Saxums (the brother of the owners of Epoch is in my local wine group and brings plenty). What I’ve found is I love Saxum both young and old. I made the list after a 5-yr wait and tried quite a few today from some friends’ cellar and it reinforced my affection.
