Enjoying my last bottle of 2005 with lamb this evening. Still very mellow.

This one is getting there. Great producer across the board. — 5 years ago
Biodynamic Chardonnay from Calcaire soils - spontaneous fermentation and aging in large, neutral wood.
Very reductive on the nose, even after 2h decant - with aromas of toasted sesame seeds, caramel popcorn, grilled pineapple, toasted almonds, matchstick reduction.
On the palate this is surprisingly cool - there‘s sweet exotic fruit and some caramel roundness, but this is nicely balanced with herby acidity and a mineral backdrop.
It’s a tad too rich for my taste, but it’s very good and matched the Skrei cod so nicely.

Yummy! Pour it on your pancakes - or have with some nice foie gras — 5 years ago
