Yatir Forest Cabernet Sauvignon
Dark ruby in color with a short purple rim.
Fruity nose of blackberries, sweet cherries, black currants, oak, vanilla, licorice, spices, tobacco, chocolates, eucalyptus, vegetables, pencil lead and peppercorn.
Full-bodied with medium acidity and long legs.
Dry on the palate with blackberries, blueberries, sweet cherries, vanilla, licorice, vegetables, bitter herbs, bell peppers, graphite, spices and peppercorn.
Long finish with fine grained tannins and cranberries.
This 8 year old Israeli red blend is very tasty now. Well balanced with nice complexity and a great mouthfeel. Spicy with lots of earthy notes, yet fruity. A blend of new and old world red.
Good by itself (after 3 hours in a decanter) and good with food too. Would pair very nicely with barbecue lamb.
Needed 2 hours in a decanter to open up, and after that, it still changed every 20 minutes. Very interesting development here, where at the beginning it was fruity yet tart, all the way to fruity with lots of green notes. Would be better in 2 years.
I paired it with with hard cheeses and appetizers.

A blend of 67% Cabernet Sauvignon, 25% Petit Verdot and 8% Merlot. Grapes are grown at around 2700 feet elevation. Aged for 16 months in French oak barrels (30% new). Kosher.

Apr 23rd, 2016Lovely deep robe. Nice complexity on nose, with an intriguing note of caraway seeds to the rich red and black fruit. Tannins are tight but the balance is there, with rich, sweet fruit. Concentrated and needs more time but will be very enjoyable.

Dec 22nd, 2015Yatir is a boutique winery owned by Carmel winery, they produce this in the south Judgean hills at an altitude of 900 meters, the first vintage was 2001, 2005 was just spectacular, this wine is a blend 77% CS , 13% Petit Verdot, 10% Merlot. The color is deep garnet, on the nose black current, cedar, spices, light mint, full body with firm dry tannins, great acidity and a long chewy finish. The wine has matured beautifully over the last decade, and has a few more years left. My score 90, drink to 2019

Out of the bottle it was bitter and unattractive. It needed to open for 3 hours. Fruity on the palate with blueberries, plums, currants, peppercorn and spices. Bold and full bodied with nice fat legs. Dry on the finish with bold tannins.
Nice blend of 85% Cabernet Sauvignon, 8% Malbec, 7% cabernet Franc. Aged in oak for 12 months.
