Hm, this one was wound up way tight and took a good 30 minutes before opening up to some beautiful light bramble and flowery goodness. Dried herbs, fresh cranberry, maybe some fennel notes but not unpleasant or too conspicuous. Very restrained and would likely pair well with many dishes - we had chicken noodle soup to combat the cold!
