The 2016 Cabernet is blend of 94% Cabernet, 3% Petit Verdot, 3% Cabernet Franc & 1% Merlot.

The nose shows; ripe, slightly sour but, bright floral fruits. Blackberries, black raspberries, black plum, dark cherries, baked strawberries and haunting blue fruits. Limestone minerals, vanilla, nutmeg, clove, Iight dark spice, caramel, dark, rich turned earth, mocha notes, dry crush rocks, used tobacco, light graphite, dry brush with red, blue and purple florals.

The body is full with sticky, dry, firm tannins. The fruits are nicely ripe and brightly floral. Blackberries, black raspberries, black plum, dark cherries, baked strawberries and haunting blue fruits. Limestone minerals, vanilla, nutmeg, clove, Iight dark spice, caramel, dark, rich turned earth, mocha notes, dry crush rocks, dry tobacco, light graphite, dry brush with red, blue and purple florals. The acidity is excellent. The structure, tension, length and balance are quite nice but require another five years in bottle. The finish shows nice balance with fruit & earth. It’s ripe, elegant, polished and persists for minutes. 92 now with the potential for more in five plus years.

Waterford toured us around the entire property in their Land Rover safari Jeep as if you were truly on safari.

Third red wine on the wine drive at Waterford. Deep ruby red in appearance. A bit mute with dark flowers, chalkiness and spices. Medium plus tannins (6.5/10) and full bodied. Solid acidity throughout with notes of dark berries, spices and minerality. A touch bitter too. Long finish. This was given a little bit of air before the drive, it needs more. Drink from 2019 till 2029. (90+)

Made up of 90% Cabernet Sauvignon, 6% Petit Verdot, and 4% Merlot. Aged for 18 months in 34% new French oak and 182 barrels produced.

Quite green on the nose with jalapeños and bell peppers followed by some herbal notes, chalk and cherries. Medium tannins (6/10) and medium plus body. Layered palate with dark berries, green peppers and spices that have a long finish. Drink till 2021.

Made up of 92% Cabernet Sauvignon, 5% Merlot and 3% Cabernet Franc. Aged for 20 months in French oak barrels and 4,675 cases produced.
