Needs some time to open up, quite muted at opening.
Ripe quince, green pear, a touch of lemon, thyme and other herbs - all in a rather cool, fresh packaging. A waxy hint and a mineral undercurrent. Very fresh.
On the palate this has great energy. Brilliant zingy acidity, all quince & lemons, but also nice breadth and good structure & depth. The minerality kicks in towards the finish with a saline whiff.
Quite some complexity here, and poise, too.
Very not Tokaj but delicious nonetheless.
