Ruby red on first decant, with no change after a couple of hours. Fresh bamboo shoots early, followed by unripe stone fruit - highlighting crushed green walnut skins - and again onwards to the finale of caramelised St Dominique Violette; figgy,burnt,lovely! The palate is early red peppercorns, with late dark chocolate and leather strapping finish. Surprisingly supported a dry rub brisket, with a twelve hour smoke over apple and hickory. I know, no sense, right?! Prove it wrong!
