Make Haste Yakima Valley Red Wine
Great label, meaning can a big red style of this varietal soar? Paired it with seared sockeye and a chocolate chili sauce with mushrooms sweet peppers and cabbage. Medium extracted pigment, cherry red, excellent clarity. Red fruit aromas, bitter, higher alcohol style (14.7% alc/vol). More like a Malbec or Zin in vinification straight out of the bottle. Needs time to decant, mellow. So far the wrong pairing, but I’ll be patient as these guys make great WA state reds… 200 cases made. 24 hours later, good red fruit and eucalyptus flavors, bitterness largely gone but high alcohol - not hot though -and too much wood and barrel extraction. It’s big, but not to everyone’s taste, I’m afraid.

Mar 29th, 2022Sweet spice, crushed rock, tangy red fruit. Fun and tasty. I suspect one more year will have this wine hitting a sweet zone.
