Vintage Sac

A unique expression from many vintages ago. I took my daughters for a memorable visit to this meadery five or six years ago when they were little. They had a great time learning about bees and running around the property. We served this bottle tonight in a party as part of an hourly toast of different sherrys, Madeiras, fortified wines, and ports. This was a memorable one. Not as sweet as I expected. The honey really comes through though.

It's all about the honey. A blend of classic Vancouver Island varietal honeys form a complex, oak-aged, sweet Mead that is finally balanced. Sweet and syrupy!
