Theorem Vineyards
Hawk's Prey Diamond Mountain District Cabernet Sauvignon
Finally getting around to posting wines from my annual Napa trip from two weeks ago. Always goes by quick! Lots of fun new stops this year.
Theorem was one of our highlights last year, so we made sure a return visit was lined up this year. Base of Diamond Mtn with one of the most beautiful properties I’ve seen. Over the last 12 months, they’ve added a couple new wines (with more to come from Moon Mountain). TRB is the winemaker.
This is Theorem’s “entry level” cab. 100% Cabernet from young vines on their diamond Mtn estate. Just like the 2016 vintage, this is made in a decadent and ripe style. Showing the entire fruit spectrum from red, blue and black with baking spices (vanilla, nutmeg), sandalwood, and freshly dipped dark chocolate fruits are all on display. Soft yet well built structure allows this to be very approachable early on but can hold easily for a couple years and still be quite youthful. Not quite as chalky/dusty as the 2016. This 2017 shows more concentrated fruit and a slightly more sweet finish compared to the structured and slightly more tannic 2016.

Day 4 in Napa in the books! Running a day behind on notes...Napa time runs slow AND fast!
This is Theorem’s Estate Cab from young vines. Intoxicating ripe red, blue and black fruit and sweetened baked berry pie. Chocolate covered black cherry, nutmeg, and a plush finish. Incredible for the price.

We lost something old at Theorem today (our Barn that stood for nearly a century and a half collapsed), but we also gained something new. This week we released our second wine from the Theorem Estate on Diamond Mountain. Our 2016 Hawk’s Prey is the inaugural vintage of this Cabernet Sauvignon made by Thomas Rivers Brown, from a vintage that looks to be one of the best ever in Napa, and it’s under $100. I’m biased, but if this isn’t stunningly delicious than I don’t know what is.

Two years ago today, I tasted my first wine from Theorem, the 2013 Voir Dire. A year later, I tasted my second bottle, the 2014 Voir Dire. I thought at the time that it would be a cool birthday tradition to start. To say that this tradition has escalated quickly would be an understatement. This year I am actually part of Theorem...
What better way to keep the tradition going than to taste our new wine, Hawk’s Prey? The 2016 Theorem Vineyards Hawk’s Prey is sourced from the young vines on our estate on Diamond Mountain. The wine just pops. So much verve and tension combines with lush black raspberry, crème de cassis, baking spice and a rich, dark chocolate, but with that cannot-put-my-glass-down savoriness that just kills.
Now there are two of them...
