Chef’s Table. Very developed. By itself a bit tired but sang with the braised veal cheeks with Mexican leanings.

Fresh leather, cranberry sauce, black tea, rosemary. Drinking pretty well but not for too much longer.

2001. Surprising tannins but great balance of acids. Dried herbal notes mixed with candied cherries, black licorice. Needs double decanting and an hour plus.

This is STUPID GOOD. Still has all the backbone and acidity, yet maintains a mellow finish with a lighter mouthfeel. Great food wine, and a steal of a deal!
