Just the other day I was telling my co-worker, "I'm not really a fan of older wines. I just don't know how to appreciate them. Tonight I found this Cabernet in my wine fridge. 1981 Sullivan Vineyards Estate Cabernet Sauvignon.... Oh. My. God! This wine has aged so gracefully! Light bouquet of earthiness and meat. Rich, deep, garnet-red, no sign of oxidation.... Plum, dust, and cocoa on the palate. Sweet Baby Jesus, Jim Sullivan was a wizard. I wish I could have met him. (I worked for Sullivan Vineyards in 2014. That's how I scored this gem) I was sure this wine would be "ruined", past its prime, oxidized. I was happily mistaken. Just.... YAY!

I'm not good at older vintage wines. This Cabernet "might" be past its prime. I just don't know. Simmered Plum & baking spices. I'm detecting some tannins. There's some tobacco on the nose. I like it.
