Mar 30th, 2018Very reductive on opening. Matchstick and rubber. But in the safe zone - dissipates and is resolved on day two. Nose becomes mineral, with lemons, grapefruit, pear and some quince. So mineral on the palate, salty, great density, body, texture, acid. Such a long finish. Like villages white burgundy filtered through volcanic rock.
