A surprising, joyful listan Blanco with a touch of Pedro ximinez. Somewhere between a Jura Chardonnay and a fino sherry. Gooseberries, sea foam, preserved lemon, acidic backbone.

Very reductive on opening. Matchstick and rubber. But in the safe zone - dissipates and is resolved on day two. Nose becomes mineral, with lemons, grapefruit, pear and some quince. So mineral on the palate, salty, great density, body, texture, acid. Such a long finish. Like villages white burgundy filtered through volcanic rock.

Outstanding canary island wines. Very mineral. Old tressed vines.

Reductive out of the gate. Lemon Warhead. Tangy, salty bitch slap. Ver’nice.

Heavy SO2 on the nose, but with some air this yields a salt mine of a wine. Full bodied and high acid with a rip roaring saline quality on top of the bright citrus explosion. Fascinating.

More obvious smoke & some sour patch on entry. More subtle than the usual tangy & salty arrows coming from the Canary Islands.

Gotta agree with @Josh Morgenthau here. The reductive feeds, rather than detracts from, the structure and punchy evolution in your mouth.

Paired perfectly with my smoked eggplant dish with anchovies and crusty bread. Such a wonderful expression of volcanic wine.
