Beautiful and sparkling pale salmon color that is so “en vogue” right now for rosé wines. This one is quite interesting on the nose with medium intensity spicy white pepper and fresh cherry, red current, and violets. This continues on the palate with lively acidity and quite a long finish for a rosado. I can imagine endless amazing pairings for this from tuna tartare to pasta with cream sauce to a nice brunch with eggs Benedict. Love!

Very pale Provence-style rosé from old Garnacha vines in Gredos, one of the hottest regions for Garnacha in Spain. Vineyards are planted on granite and sandy soils, at over at 2,500 ft. in the village of Cebreros (which lends its name to the newly-established Cebreros appellation, where Soto Manrique is emerging as a key player). Fermented in concrete vats, with no skin contact, blanc-de-noir style. Lean, light-bodied, with subtle aromas of red fruit, strawberry, cherry and herbs. Zesty acidity.
