Nice age to the yeasty lemon curd, with lemongrass biscuits. Great baked apple and lemon custard with a creamy texture that is super smooth, and lengthy. There is a paw paw creaminess on the back that downright loiters!!! #jschram

Santa got my bubbles. He left a note saying good stuff. Santa thought I aged it too long as all the rose colors we’re gone and it was honey colored with lots of secondary flavors like yeast and earth. Still lots of life Santa suggested I not age rose bubbles. He didn’t give me any more bubbles either.

Wow. Compared to an 04 Roederer, this one was more complex, had more fruit density, although bubbles were a bit less. The fruit structure of this sparkler had not faded. Dense citrus note, spicy, dry, cumin, really good weight. A hint of tart that made the corners of your mouth pucker juuuust enough to take another sip. I could have drained the whole bottle in no time flat. Sparkler of the day.
