Mar 25th, 20232021/8/7 with Regalo delivery. (No bottle code visible.) This has become a favorite blanc de blancs with some maturity. With a little air, this opens to reveal lots of creamy, lemony fairy, pastry, and caramel. There’s plenty of acidity and minerality to keep things I focus too.

Aug 9th, 20212021/2/27 with birthday delivery from Joel Robuchon. I hadn’t had this in years, and while I remember liking it before, it was wonderful this time around. The caramel and hazelnut is reminiscent of mature Champagne, but there’s still freshness and minerality.
