Always an interesting wine due to Morten's use of appasimento style for 1/5 of the grape harvest.
Honeycomb, dried lemon peel, ripe pineapple core; pineapple puree, lemon zest, butter, oxidized yellow apple peel; long finish, round, complete.

Improved since our last bottle ~2Y ago. Prior notes mostly apply, but a more confectionery nose tonight with some oak influence arriving. This bottle still wants more time, enjoy 2025-30.

Great bottle for a relaxing Sunday afternoon. The finale of our '16 Estate Chardonnay stash. Prior notes apply, but lemon poundcake on the palate is most evident today. Decanted 2H; enjoy 2022-2026 from proper storage.

Apr 10th, 2022Nose has ripe yellow apple, creamy oak goodness, pineapple core and browned butter.
Palate has ripe pineapple, under-ripe pineapple, ripe yellow apple, light oak notes with notable acidity still and medium finish. Still many, many years to go on this wine, drink 2025-2030+ from proper storage. Decanted 8H.
I'll reiterate prior comments, this is a unique wine...Winery notes:
"80% of the grapes were immediately whole cluster pressed. The Chardonnay was fermented in French oak with about 16% new oak. The remaining 20% of the grapes were placed, single layer, in shallow trays for six weeks following the traditional Passito method. After natural dehydration, the grapes were gently pressed and fermented in barrels. The two fractions were blended prior to bottling. A full malolactic fermentation lowered the acidity and improved the texture of the wine. The wine was gently filtered prior to bottling."

Nose has grilled lemon, baked green apple with sugar and wet granite, the French oak regimen seems a little more dominant then to my liking.
Palate has lemon juiced over cut green apple, lemon zest, decent FLX terrior with minor salinity and dry soil.
A young bottle, as I still complain about 2017 Chablis being too sharp and needing much more time. No overloaded acidity here, but I do see potential in this bottle for pleasant development in another 4-6 years.

Lemon cream, pear, slightly underripe yellow apple / some smoky bitter, flinty reduction / rich and balanced use of oak complemented with plenty of acid and structure. This is a finger lakes wine for total Burgundy lovers 😍
