Bing cherries toasted over cedar coals! Wow. Very unique. There is a Christmas/fruitcake spice note too. Great acidity! Baked rhubarb pie, black pepper and birch wood. Drinking really well!

On the nose: Fennel, dried figs mothballs, tomato, some cherry red fruit some violets.
In the taste: great acidity ,sassafras, dried dark fruit secondary flavors, a little bit of graphite (reminds me of old Bordeaux), red fruit almost cherry

Dried cherries and raspberries, with crisp acidity, wood and minerals. This went really well with a few pieces of dark chocolate for dessert.

Delicious dusty black cherry. 13.8 ABV, and very well balanced.
