Biodynamic cinsault that I got at the winery last spring. Soft and light with good acidity and a bit of tannic grip. More savory than fruity. Nice wine that went well with Spanish cod and sausage.

Aug 27th, 2018The Cinsault can start out rough and alcoholic, but once decanted and allowed to breathe it softens beautifully. This wine is very rich, while remaining light and bright, like an extreme Syrah, or the viticultural equivalent of chocolate mousse. This evolved significantly over the course of two hours and responded in dramatically different yet positive ways to each dish. Use it to wash down burrata and fresh peaches- the dish for which this Cinsault was bottled.
