2022/5/17 with uzaku, uni, etc. this opens with a mix of tropical fruit (ripe papaya and pineapple), melon, lemon, pear and apple. The cream, toast and butter are in the background, but it’s interesting how the fruit and more savory elements see-saw back and forth over time. On the palate, there’s a nice balance of acid, flesh, sweetness and savor. The finish has a nice mineral twist. Overall, more fruit driven and “country wine” than Côte d’Or whites, but very enjoyable.
