Bin 407 Cabernet Sauvignon

Dense Ruby from an excellent ripe vintage. Blackberry, black currant and cassis - a classic South Australian Cabernet in all senses, complete with some herbal notes. It’s nothing like its big brother Bin 707 which is bigger and more full bodied even though the 407 has a drinking window through to 2045 according to the Rewards of Patience. The fruit for the 407 is multi regional from all major vineyard districts in South Australia. It is not often you open a 16 year old wine and say you’ve opened it too early but this could be the case here.

Nice aromas of mint (not positive but this 100% Cabernet Sauvignon is probably mainly from Coonawarra) and cassis, black currant aromas. Medium bodied with an inner core of latent strength, inherent in most Penfolds Reds. Tastes way younger than 13 years and will cellar for at least another 10 to 15 years or more. Postscript: I thought this statement was appropriate from Penfolds First Chief Winemaker and the creator of Grange, Max Schubert said, “Penfolds different cuvées may differ in character Year by Year, but all bear an unmistakable resemblance and relationship to each other. “ This is pertinent when tasting Bin 407.

Dense crimson in colour - impenetrable. Strong aromas of mint. The excessive oak influence in Penfolds reds early in life has settled down after 15 years. All the individual components early on are now integrated settling in for a long life. Penfolds say to 2040. Ripe blackcurrant with plum, dark chocolate and liquorice notes. Bin 407 came about because of an embarrassment of Cabernet riches even after their flagship Bin 707. An excellent Cab - I now have 5 left for the coming decade or so.
