Bin 407 Cabernet Sauvignon
It is time for my Friday's Cabernet fix. This week Australia makes the cut.
Dark ruby/Inky in color with a brick rim.
Beautiful nose of blueberries, cherries, currants, oak, vanilla, cola, licorice, leather, smoke, chocolates, bacon, mocha, earth, licorice, oregano, peppercorn, spices, green vegetables, tobacco and pencil lead. Really nice complexity.
Medium bodied, smooth and elegant, with medium acidity and long legs.
Dry on the palate with blackberries, cherries, currants, vanilla, licorice, eucalyptus, herbs, red pepper, tobacco, coffee, light alcohol, tar, toasted oak, spices and peppercorn.
Long finish with fine grained tannins and tangy cherries.
This impressive 16 year old Cabernet Sauvignon from Australia, is drinking wonderfully now. Soft, elegant and smooth, with smokiness that carries throughout.
Nicely balanced after 30 minutes of airtime, and after an hour in a decanter, it looses its balance. So you got to drink fast... 😃
I really enjoyed sniffing on it for a few hours.
Aged for 12 months in French and American Oak barrels.
14.1% alcohol by volume.
