Mar 12th, 2020Yep, no mistaking this for anything other than a Pax wine. Carbonic trousseau gris from concrete eggs. The result? Equal parts fresh white wine and skunky orange wine flavors, that kinda functions like an oxidative rosé. Fun stuff.

Feb 25th, 2019A unique and fun, peachy colored wine. This comes from the only remaining US vineyard growing the last 10 acres of Trousseau Gris. Fermented in concrete eggs and treated with minimal SO2, this has funky, floral and lemon aromatics and a luscious, juicy, crisp palette. It finishes quickly, though very cleanly. I’d pair it with most food. Tonight it was a great companion to mildly spicy posole & flank steak.
