2022/5/28 with tai sashimi 2 ways, tomato in dashi, chicken and new onion in pea and white miso soup, etc. There may be some bias since I’ve been looking for bottles like this since being reminded of how good classicist white Burgundy is with Kyoto food, but this really did it, and even more so considering the price. Savory, salty minerals, butter and citrus, the requisite oak, some honey from maturity - it all just works.

Summer 2021. The oak is somewhat prominent at this stage - going off a 2011 that I had, it’ll integrate more in a few years.

2021/5/7-9 with meunière of shitabirame, etc. A totally different thing from the straight Roche Vineuse - initially there’s a fair bit of oak but with time and air it integrates nicely. There’s citrus, white flowers, buttered toast, and some cool stones. The palate balances tangy acidity and savor. I’d love to see how this continues to evolve.

2022/8. This was the first bottle of a new purchase of three since being wildly impressed by this before. However, this was an off bottle - deep yellow, a bit flat with a hint of sherried nuttiness. I still find things like this drinkable, but not what it’s meant to be.
