We were very lucky enough to sip on this beauty recently from Moorilla Winery in Tasmania (we actually visited the cellar door at Mona in Hobart on our trip to visit the wineries of Tasmania this year). This 2013 ‘Muse’ Extra Brut Sparkling spends 4 years on lees. It has been made in an über fresh and acidity driven style that will only improve with time in the cellar.

It received 94 points from James Halliday and 92 points from Huon Hooke.

And you know what? I decided to cut off the top of the bottle with a sabre (sword) whilst being blindfolded. Wine not right?

Moorilla sent me this bottle to entice me to be a part of their sabrage competition recently, and well, I love a challenge! Check out my entry at the bottom of this post and let me know what you think in the comments.

The best bit was that after successfully chopping the top off the bottle and not chopping any of my body parts off, we got to enjoy the delicious nectar inside the bottle. Here are our notes:

In the glass it’s a pale white gold shade. On the nose it’s bloody enticing to say the least. Think crisp apples, vanilla pastry/slice, lemon zest and a slight hint of camomile. While in the mouth those juicy apples come through with a delicious acid drop finish. It’s citrus driven and zesty with a wonderfully smooth and delicate texture. It has a hint of toastiness, baking spice and nuts. Give it a few more years in the cellar and I am sure you’ll be rewarded for your patience.
