Borealis is an interesting blend of cold climate varietals. Müller-Thurgau (38%), Gewürztraminer (32%), Riesling (19%) and Pinot Gris (11%). I really enjoyed this wine. It is incredibly aromatic and really exhibits each varietal well. The nose is vibrant tropical fruits and crisp citrus. The palate began with fresh pear and white peach, then lead to a chalky, mineral bitterness. Just when I started to sense a lack of acidity the finish brought a surprise injection of acid that I can only imagine came from the Riesling. This resulted in a long mouth watering finish. Each flavor was so distinct it reminded me of Willy Wonka’s three course chewing gum. I think this is definitely a crowd pleaser for its fruit characteristics, but it is also a very interesting wine for the more discerning palate.
