
2021. This is the “Long Élevage” aged an additional 14 months in barrel and with a higher percentage of Cabernet Sauvignon (75% and 25% Valdiguié) than the wine released earlier. A beautiful day today, but with rain expected the next four days, we decided to do some grilling now. Prime ribeye and smoky grilled asparagus, backyard (hen-of-the-woods and blue oyster) and farmers market (oyster and shiitake) mushrooms, Roquefort, and a red wine pan sauce. We loved this wine and at 13% it was a perfect accompaniment to the meal.
