Biscuits, rye, miso, whoa. Delicious. Green (unripe) fruit notes. Pleasant acid snap and some primary yeastiness plus a little bitter tannin in the finish that I think will all develop beautifully in bottle. Love this producer and cuvee, though I may prefer the more basic Resonance cuvee, at least for early drinking.

Bakery aroma. Ethereal. Yeast that is truly blossoming on the nose; moving from primary to secondary with layers of brine, flowers, cocoa butter, ocean air. Superb. Really come around nicely. 2014.

Thanksgiving champagne. Red berries, lime, chalk. Huge acid in this one that worked well with some truffled salume and cheese. Very nice champagne, but think that this may be even more expressive with a few more years bottle age.
