FINALLY turning the Corner and some secondary elements emerging like an aged Sauterne, dried apricots, nuts but still very restrained sweetness . . pairs well with the cheeses, Marcona almonds , prosciutto . . will try again tomorrow with some Foir Gras torchon . .
