A bright sparkling brut, bright to the nose, and redolent of Meyer lemon on the tongue, with a gently lingering finish. It pairs beautifully with light desserts and fruit.

Nose of grapefruits, limes, citrus, yeast, minerals and green apples.
Light bodied and crisp, with small bubbles.
Dry on the palate with limes, herbs, grapefruits, citrus, sea salt, white pepper, yeast, toast and bitter almonds.
Medium finish with bitter herbs.
This French, Blanc de Blanc, sparkling wine is drinkable, but not my style. Crisp and refreshing with racy acidity, but a bit bitter for me.
12.5% alcohol by volume.

Feb 9th, 2017Floral and citrus notes on the notes that continue on the palate. Some of the dreaded green apple up front, but it fades quickly enough into a more diverse fruit profile of lemon, peaches and unripe strawberries. Almost no minerality or funk, but Doesn't overstay it's welcome.
